Delicious and surprisingly light snack or meal.

Reminiscent of a Caprese salad (tomatoes, mozzarella, basil, balsamic vinegar) but sweeter with the addition of fresh strawberries, herbal basil, and the sweet tangy flavour of the balsamic vinegar.

The cream cheese adds a richer texture than mozzarella.

The toasted English Muffins provide a light base with a gentle crunch to balance the softness of the fruit and cream cheese.

  • 2 Oakrun Farm Bakery English Muffins
  • 1 1/2 – 2 cups strawberries, diced (8-10)
  • 2 tablespoons of fresh basil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Sugar to taste
  • 4 ounces cream cheese, softened at room temperature


Step 1: Cut off strawberry stems and dice.
Step 2: Add to a bowl with balsamic vinegar and a pinch of salt and sugar. Stir and set aside for a few minutes.
Step 3: Chop basil.
Step 4: Open English Muffins and toast until well-toasted.
Step 5: Add cream cheese to each half of the English Muffins.
Step 6: Top with strawberry mixture and sprinkle with fresh basil.
