Cheese and Bacon Crumble English Muffins

The texture of the toasted English Muffin provides an excellent base for the soft, thick layer of cheese.

Reminiscent of the traditional Welsh Rarebit, a popular comfort meal served in British pubs.

INGREDIENTS

  • 4 Oakrun Farm Bakery English Muffins
  • 8 ounces grated, strong cheese (i.e.,extra old cheddar)
  • 1 tablespoon of butter
  • 2 teaspoons of Worcestershire sauce
  • 1 level teaspoon of dry mustard
  • 2 teaspoons flour
  • Pepper to taste
  • 8 tablespoons of milk
  • 8 slices of bacon or smoked bacon

DIRECTIONS

Step 1: Combine the cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan.
Step 2: Mix well and add the milk to moisten. Do not make the mixture too wet!
Step 3: Stir over a gentle heat until all ingredients are melted and mixed into a smooth consistency. This mixture can be made and kept in the refrigerator for several days if required.
Step 4: Set the mixture aside to cool for a short period of time.
Step 5: Fry the bacon, cool and crumble into bits.
Step 6: Open the English Muffins and toast.
Step 7: Spread the cheese sauce over the English Muffins and brown under a hot grill. Top with the bacon crumble.
