  • 1 pack Oakrun Farm Bakery English Muffins, lightly toasted
  • 4 cups strawberries, sliced
  • 1/3 cup granulated sugar
  • 1/4 cup finely chopped mint
  • 1 cup heavy whipping cream
  • 1 tbsp lemon zest
  • 1/2 cup icing sugar
  • 1 tsp vanilla extract


Step 1: Add the sliced strawberries to a bowl. Add the sugar, basil, and lemon zest and gently stir until evenly combined. Set aside for 15-20 minutes to allow a syrup to develop.

Step 2: Using a stand mixer or hand mixer, whip the cream in a large bowl on medium speed. Once it begins to thicken, add in the icing sugar in three additions, then add in the vanilla. Continue to whip until stiff peaks form. Alternatively, you can skip this step and use a pre-made whipped cream instead.

Step 3: To assemble, layer the lightly toasted English Muffins with a large dollop of whipped cream and then a spoonful of berries with syrup. Enjoy!
