INGREDIENTS

  • 4 Oakrun Farm Bakery crumpets
  • 1/3 cup of canned refried beans, warmed
  • 1 small avocado (sliced)
  • 1/2 red pepper (finely chopped)
  • 1 tablespoon of light sour cream
  • 1/3 cup of grated cheddar cheese
  • Sliced jalapeño, to garnish (optional)
  • Cilantro leaves chopped to garnish

DIRECTIONS

Step 1: Preheat oven to broil.
Step 2: Place the crumpets on an oven tray lined with foil or parchment paper. Spread the refried beans onto the crumpet. Top with avocado and red pepper. Add sour cream and sprinkle with cheese.
Step 3: Cook under the broiler for 3 minutes, or until cheese the melts and becomes golden.
Step 4: Move from tray to plates. Sprinkle each with jalapeño (optional) and chopped cilantro. Serve immediately.
