Step 1: Make the Chocolate Glaze. Place the chocolate chips in a medium bowl. In a small saucepan, heat heavy cream until hot but not boiling. Pour the heavy cream over chocolate chips and let stand for 5 minutes. Stir the mixture until smooth. Whisk in corn syrup and vanilla extract. Use the mixture immediately.
Step 2: Dip waffles into Chocolate Glaze, and sprinkle with Toppings: coconut, chopped pistachios or nuts, or sprinkles. Let stand at room temperature to set (at least 1 hour).
Step 1: Make the Cinnamon Sugar. In a brown paper bag, shake together sugar and ground cinnamon.
Step 2: Toast / microwave waffles to warm them.
Step 3: Toss warm waffles with Cinnamon Sugar and serve.
