Preheat oven to 425 F.
Step 1: Make seasoning mix by combining the smoked paprika, oregano, salt, garlic powder and black pepper in a small bowl.
Step 2: Line a baking pan with parchment paper or foil.
Step 3: Transfer the chicken to the pan and drizzle with olive oil and rub with seasoning mix on both sides, evenly to coat.
Step 4: Bake for 18-20 minutes until golden, or until internal temperature is 165 F (75 C) using a meat thermometer.
Step 5: Remove from oven and allow to cool enough to handle, around 10 minutes.
Step 6: Cut the chicken breast into approximately 2-inch pieces and each Oakrun Farm Bakery Belgian Waffle into fourths.
Step 7: Skewer the chicken and waffles pieces, around 2 pieces of each per skewer.
Step 8: Serve with maple syrup for dipping. Enjoy!
